Cook the polenta
Slowly whisk in the cornmeal while stirring constantly to prevent lumps. Reduce heat to low and cook, stirring frequently, for 20–25 minutes until thick and smooth.

Finish the polenta
Stir in the butter, Parmesan cheese, and black pepper until fully incorporated. Taste and adjust seasoning if needed.

Set and chill
Spread the hot polenta evenly into a lightly greased baking dish (about 9x13 inches). Smooth the top, allow to cool at room temperature, then refrigerate for at least 1 hour or until firm.

Cut the polenta
Once fully chilled and firm, turn the polenta out onto a cutting board and slice into fry-shaped batons.

Prepare dredging mixture
In a shallow bowl, mix the flour, cornstarch, smoked paprika, and garlic powder.

Coat and fry
Lightly dredge the polenta fries in the flour mixture, shaking off excess. Fry in batches for 3–4 minutes per side, or until golden and crispy.

Season and serve
Remove fries with a slotted spoon and drain on paper towels. Immediately season with sea salt and serve hot, optionally with dipping sauces.
