Method
Pizza Dough

Activate Yeast
In a large bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5–10 minutes until foamy.

Form Dough
Add flour, salt, and olive oil to the yeast mixture. Mix until a shaggy dough forms, then knead on a floured surface for 8–10 minutes until smooth and elastic.

Rise
Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 60–90 minutes or until doubled in size.
Red Sauce

Build Sauce
Heat olive oil over medium heat in a small saucepan. Add garlic and cook for 30 seconds until fragrant.

Simmer
Stir in crushed tomatoes, oregano, basil, salt, and pepper. Reduce heat and simmer for 15–20 minutes, stirring occasionally. Set aside to cool slightly.

Prepare Sausage
In a skillet over medium heat, cook Italian sausage, breaking it into small pieces, until browned and just cooked through. Drain excess fat and set aside.

Preheat Oven
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.

Shape Dough
Punch down risen dough and stretch or roll into a 14-inch round. Transfer to a floured pizza peel or baking sheet.

Bake for 12–15 minutes until crust is golden and cheese is bubbling and lightly browned.

Remove from oven, let rest for 2–3 minutes, slice, and serve hot.
