Maple-Dijon Vinaigrette

Combine Base Ingredients
In a medium mixing bowl, whisk together the apple cider vinegar, Dijon mustard, maple syrup, and minced shallot until fully combined.

Emulsify Dressing
While whisking continuously, slowly drizzle in the olive oil until the vinaigrette is smooth and emulsified.

Season
Add kosher salt and freshly ground black pepper. Taste and adjust seasoning as needed. Set aside or refrigerate until ready to use.
Salad

Prepare Greens
Place the mixed greens in a large salad bowl. Ensure greens are clean and thoroughly dried to prevent a watery salad.

Add Fruits and Nuts
Top the greens evenly with sliced Granny Smith apples, dried cherries, and candied walnuts.

Sprinkle the crumbled gorgonzola evenly over the salad.
