    Prepare Spinach

    Sauté spinach in a dry skillet over medium heat until wilted, about 2–3 minutes. Allow to cool slightly, then squeeze out excess moisture and finely chop.

    Make Filling

    In a mixing bowl, combine chopped spinach, ricotta, mozzarella, Parmesan, garlic, salt, and black pepper. Mix until well blended.

    Assemble Ravioli

    Lay out wonton wrappers or pasta sheets. Place about 1 tablespoon of filling in the center of half of the wrappers. Whisk together egg and water, brush edges, top with another wrapper, and press firmly to seal, removing air pockets.

Breading & Frying

    Set Up Breading Station

    Place flour in one shallow bowl. In a second bowl, whisk eggs with milk. Place breadcrumbs in a third bowl.

    Bread Ravioli

    Dredge each ravioli in flour, dip into egg mixture, then coat thoroughly with breadcrumbs. Set aside on a tray.

    Fry Ravioli

    Heat oil in a deep skillet or fryer to 350°F (175°C). Fry ravioli in batches for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.

Spicy Marinara Sauce

    Sauté Aromatics

    Heat olive oil in a saucepan over medium heat. Add garlic and sauté until fragrant, about 30 seconds.

    Simmer Sauce

    Add crushed tomatoes, red pepper flakes, oregano, salt, and sugar. Simmer for 15 minutes, stirring occasionally, until slightly thickened.
