Pasta

Method

Pasta

  1. 1

    Boil Pasta

Bring a large pot of water to a rolling boil. Add salt and spaghetti. Cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Carbonara Sauce

  1. 2

    Cook Bacon

In a large skillet over medium heat, cook the diced bacon until crispy and the fat is rendered. Remove excess grease if needed, leaving about 1 tablespoon in the pan.

  2. 3

    Sauté Garlic

Add minced garlic to the skillet with the bacon and cook for 30–60 seconds until fragrant, being careful not to brown it.

  3. 4

    Add Cream

Lower the heat to medium-low and stir in the heavy cream. Simmer gently for 2–3 minutes until slightly thickened.

  4. 5

    Combine Pasta and Sauce

Add the drained pasta to the skillet along with a splash of reserved pasta water. Toss to coat the pasta evenly in the sauce.

  5. 6

    Finish with Cheese and Seasoning

Remove the pan from heat and stir in grated parmesan cheese, cracked black pepper, and salt. Toss until the cheese melts and the sauce becomes creamy. Add more pasta water if needed to loosen the sauce.
