Grain Bill

    Mash

    Heat 4 gallons of water to 165°F (74°C). Add crushed grains and mash at 152°F (67°C) for 60 minutes, stirring occasionally to ensure even conversion.

    Mash Out and Sparge

    Raise mash temperature to 168°F (76°C) for 10 minutes. Sparge with hot water until approximately 6.5 gallons of wort are collected in the brew kettle.

Hops

    Boil and Bittering Addition

    Bring wort to a rolling boil. Add Columbus hops at the start of a 60-minute boil to provide firm West Coast bitterness.

    Flavor Additions

    With 15 minutes remaining, add Cascade hops, Whirlfloc tablet, and yeast nutrient. With 5 minutes remaining, add Centennial hops for bright citrus aroma.

    Dry Hopping

    After primary fermentation slows (around day 7), add Cascade and Centennial hops directly to the fermenter. Allow to dry hop for 5–7 days.

Yeast

    Chill and Pitch

    After the boil, chill wort rapidly to 68°F (20°C). Transfer to a sanitized fermenter and pitch the American ale yeast.

    Fermentation

    Ferment at 66–70°F (19–21°C) for 10–14 days, or until final gravity is stable.

Water & Additions

    Water Preparation

    Use filtered water with moderate sulfate levels to enhance hop bitterness and dryness, typical of a West Coast IPA.

  2. 9

    Packaging

    Once fermentation and dry hopping are complete, cold crash for 48 hours. Package by kegging or bottling, carbonating to approximately 2.4 volumes of CO₂.
