Slice the Bread
Preheat the oven to 400°F (205°C). Slice the baguette on a slight diagonal into 1/2-inch thick pieces and arrange them in a single layer on a large baking sheet.

Garlic Rub
Remove the toasted bread from the oven. While still warm, rub one side of each slice with the cut side of a whole garlic clove to infuse subtle garlic flavor. Set aside.

Prepare the Tomatoes
Dice the heirloom tomatoes into small, bite-sized pieces. If very juicy, gently drain excess liquid to prevent soggy bruschetta.

Chop Cheese and Herbs
Cut the smoked mozzarella into small cubes. Thinly slice the fresh basil leaves and finely mince the garlic cloves.

Mix the Topping
In a medium mixing bowl, combine tomatoes, smoked mozzarella, basil, and minced garlic. Drizzle with extra virgin olive oil, then season with kosher salt and freshly ground black pepper. Gently toss until evenly combined.
