Pasta
Alfredo Sauce
Method
Pasta
- 1
Boil the Pasta
Bring a large pot of water to a rolling boil. Add the salt, then add the fettuccine. Cook according to package instructions until al dente, stirring occasionally to prevent sticking.
- 2
Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set aside.
Alfredo Sauce
- 3
Melt Butter
In a large skillet or saucepan over medium heat, melt the butter gently, making sure it does not brown.
- 4
Add Cream
Pour in the heavy cream and stir to combine. Bring to a gentle simmer and cook for 3–5 minutes, allowing the sauce to thicken slightly.
- 5
Incorporate Cheese
Reduce heat to low. Gradually add the grated Parmesan cheese, stirring constantly until fully melted and smooth.
- 6
Season Sauce
Add nutmeg, black pepper, and salt. Taste and adjust seasoning as needed.
- 7
Combine Pasta and Sauce
Add the cooked fettuccine to the sauce and toss to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
