Preparing the Soup Base

Simmer the aromatics
In a large pot, combine the coconut milk and chicken broth. Add the galangal slices, smashed lemongrass stalks, torn kaffir lime leaves, and crushed Thai chilies if using. Bring to a gentle simmer over medium heat. Do not boil to prevent the coconut milk from curdling. Simmer for 10 minutes to infuse the flavors.

Season the soup
Stir in the fish sauce, palm sugar, and lime juice. Taste and adjust seasoning as needed. If more salt is desired, add a bit more fish sauce. For more acidity, add extra lime juice.

Ladle the soup into bowls. Top with fresh cilantro leaves, sliced green onions, and a lime wedge on the side. Serve hot.
