Preparing the Fish Cakes

Prepare the Fish
Place the white fish fillets into a food processor and pulse until finely minced. Transfer to a mixing bowl.

Combine Ingredients
Add the finely chopped green beans, red curry paste, fish sauce, lime leaves, and fresh coriander to the minced fish. Mix well.

Add Binding Ingredients
Stir in the lightly beaten egg and cornflour until the mixture is well combined and forms a sticky consistency.

Shape the Fish Cakes
With damp hands, form the mixture into small patties, about 5 cm in diameter.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat until hot.

Fry the Fish Cakes
Carefully add the fish cakes to the pan, frying them in batches if necessary. Cook for about 3-4 minutes on each side until golden brown.

Drain Excess Oil
Once cooked, transfer the fish cakes to a plate lined with paper towels to drain excess oil.
Preparing the Sweet Chili Sauce

Mix the Sauce
In a small bowl, combine the sweet chili sauce with lime juice. If desired, add finely chopped fresh chili for extra heat.

Serve the fish cakes hot with the sweet chili sauce on the side for dipping.
