Preparation

Dice the pineapple into small cubes and set aside.

Finely chop the yellow onion and garlic cloves.

Chop the green onions and fresh cilantro (if using).

Beat the eggs in a small bowl and set aside.

In a small bowl, mix together the soy sauce, fish sauce (if using), curry powder, sugar, and white pepper to make the sauce. Set aside.
Cooking

Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of vegetable oil.

Add the cashew nuts and stir-fry for 1–2 minutes until golden brown. Remove and set aside.

In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic and chopped onion. Stir-fry for 1–2 minutes until fragrant and translucent.

Add the cooked jasmine rice to the pan. Use a spatula to break apart clumps and combine evenly with the egg mixture.

Add the prepared sauce and stir-fry for 1–2 minutes until the rice is evenly coated.

Add the diced pineapple, raisins, and toasted cashew nuts. Stir-fry for an additional 2–3 minutes until heated through.

Stir in the chopped green onions and remove from heat.
Serving

Transfer the pineapple fried rice to serving plates or a hollowed-out pineapple shell for presentation.

Garnish with fresh chopped cilantro and serve with lime wedges on the side.
