Soak rice noodles in warm water for 30 minutes or until softened but still slightly firm. Drain and set aside.

Mince the garlic and chop the shallots finely. Slice the green onions and cube the tofu. Set aside.
Make Tamarind Sauce

In a small bowl, combine tamarind paste, fish sauce, palm sugar, water, and chili flakes. Stir until sugar is dissolved and set aside.
Cook Pad Thai

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Add tofu cubes and cook until golden brown on all sides, about 4–5 minutes. Remove and set aside.

Add the remaining 1 tablespoon of oil. Add chopped shallots and garlic. Sauté for 1–2 minutes until fragrant.

Return the cooked tofu to the pan. Add bean sprouts and green onions. Stir-fry everything together for another 1–2 minutes until heated through.
Garnish and Serve

Transfer Pad Thai to serving plates. Top with crushed peanuts and garnish with lime wedges.

Serve immediately while hot.
