Prepare Noodles and Sauce

    Cook the rice noodles

    If using dried rice noodles, soak them in hot water for 20–30 minutes until pliable but not mushy. If using fresh noodles, gently separate them and set aside.

    Make the sauce

    In a small bowl, whisk together the soy sauce, dark soy sauce, fish sauce, oyster sauce, sugar, and water until well combined. Set aside.

Stir-Fry

    Cook the protein (if using)

    Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add your choice of protein (chicken, shrimp, or tofu) and stir-fry until cooked through. Remove from the pan and set aside.

    Sauté aromatics

    Add the remaining 1 tablespoon of oil to the wok. Add the minced garlic and chopped Thai chilies, stirring quickly for about 30 seconds until fragrant.

    Add vegetables

    Add the sliced onion and bell peppers to the wok. Stir-fry for 2–3 minutes until they begin to soften but still retain some crunch.

    Combine noodles and sauce

    Add the prepared rice noodles to the wok, followed by the cooked protein (if using). Pour the sauce over the noodles and toss everything together, cooking for 2–3 minutes until the noodles are evenly coated and heated through.

    Finish with basil

    Turn off the heat and immediately add the Thai basil leaves. Toss gently until the basil is wilted and the dish is aromatic.
