    Peel and mince the garlic. Thinly slice the red chili, onion, and bell pepper. Julienne the carrot. Wash and dry the Thai basil leaves.

    If using tofu instead of chicken, drain and crumble it into small pieces.

    In a small bowl, mix together soy sauce, oyster sauce, fish sauce (if using), brown sugar, and water to form the stir fry sauce. Stir until sugar dissolves.

Cooking

    Heat the vegetable oil in a large skillet or wok over medium-high heat.

    Add the minced garlic and sliced red chili. Stir-fry for 30 seconds until fragrant but not browned.

    Add the sliced onion, bell pepper, and carrot. Stir-fry for 2–3 minutes until they begin to soften.

    Add the ground chicken (or tofu) and stir-fry for 4–5 minutes, breaking it up as it cooks, until browned and cooked through.

    Pour in the prepared sauce and stir well to combine. Cook for another 1–2 minutes until the sauce slightly thickens and coats the ingredients.

    Turn off the heat and stir in the fresh Thai basil leaves. Mix until basil is wilted and fragrant.

    Spoon the stir fry over steamed jasmine rice.
