Method

Preparation of Quinoa

    Rinse and Cook Quinoa

    Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed.

Vegetable Preparation

    Chop Vegetables

    While the quinoa is cooking, chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes and set all aside.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped zucchini and bell pepper, and sauté for about 5 minutes until slightly softened.

    Add Garlic and Spinach

    Minced 2 cloves of garlic and add to the skillet with the zucchini and bell pepper. Sauté for another minute until fragrant. Then, add the 2 cups of spinach, stirring until wilted.

    Incorporate Tomatoes

    Add the halved cherry tomatoes to the skillet, seasoning with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for an additional 2-3 minutes until heated through.

Combine and Serve

    Mix Quinoa and Vegetables

    Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Toss everything together until well combined.

    Transfer the quinoa and vegetable mixture to a serving dish. Garnish with 1 tablespoon of fresh basil before serving.
