1. Mix the Base Ingredients

In a large mixing bowl, combine 4 cups of filtered water and 1 cup of sugar. Stir until the sugar is fully dissolved.

2. Activate the Yeast

Add 1 tsp of yeast to the sugar-water mixture. Let it sit for about 10 minutes until it becomes frothy, indicating that the yeast is active.

3. Add Lemon Juice

Once the yeast is activated, stir in 1 cup of fresh lemon juice and mix well.

4. Incorporate Flavor Essence

Add 2 tbs of natural flavor essence (preferably wild Maine blueberry) to the mixture. Stir until well combined.

Fermentation

5. Ferment the Mixture

Transfer the mixture to a fermentation vessel. Cover it with a cloth or airlock and let it ferment in a cool dark place for about 5-7 days. Check daily for bubbling, indicating fermentation is occurring.

Carbonation

6. Carbonate the Seltzer

After fermentation is complete, transfer the seltzer into bottles, leaving some space at the top. Add carbon dioxide to taste for desired fizziness.

Serving

7. Serve Chilled

Serve the hard seltzer over ice in a glass. Garnish with fresh blueberries and mint leaves as desired.
