Preparation

    Prepare the Chicken

    Pat the chicken thighs dry with paper towels and season them with salt, black pepper, paprika, and dried oregano.

    Chop the Vegetables

    Dice the onion, mince the garlic, and slice the bell pepper, carrots, and zucchini into bite-sized pieces.

Cooking

    Sear the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for 5-7 minutes on each side until golden brown. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add the onion and garlic. Sauté for 2-3 minutes until fragrant. Then add the bell pepper, carrots, and zucchini. Cook for another 5 minutes, stirring occasionally.

    Deglaze the Pan

    If using, pour in the white wine and scrape up any brown bits from the bottom of the skillet. Let it simmer for 2 minutes.

    Add the Broth and Chicken

    Pour in the chicken broth and return the seared chicken thighs to the skillet. Bring to a simmer.

    Finish Cooking

    Cover the skillet and let it cook on low heat for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

    Garnish and Serve

    Sprinkle chopped fresh parsley over the dish before serving.
