Prepare the Chicken
Pat the chicken thighs dry with paper towels and season them with salt, black pepper, paprika, and dried oregano.

Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for 5-7 minutes on each side until golden brown. Remove and set aside.

Deglaze the Pan
If using, pour in the white wine and scrape up any brown bits from the bottom of the skillet. Let it simmer for 2 minutes.

Add the Broth and Chicken
Pour in the chicken broth and return the seared chicken thighs to the skillet. Bring to a simmer.

Finish Cooking
Cover the skillet and let it cook on low heat for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

Garnish and Serve
Sprinkle chopped fresh parsley over the dish before serving.
