    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and 2.5 cups of water. Cook according to the rice cooker instructions. Once cooked, let it sit for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.

    Prepare the Spam

    Slice the smoked Spam into 8 rectangular pieces. In a skillet over medium heat, add the soy sauce and the Spam slices. Cook until the Spam is browned and caramelized, about 3-4 minutes on each side.

    Assemble the Musubi

    Lay a sheet of nori on a clean surface, shiny side down. Place a scoop of sushi rice (about 1/2 cup) in the center of the nori. Flatten the rice slightly with your hands. Place a piece of Spam on top of the rice.

    Wrap the Musubi

    Fold the sides of the nori over the Spam and rice, then roll it tightly from the bottom to the top. Use a little water on the edge of the nori to seal it. Repeat for the remaining ingredients.

    Garnish and Serve

    Sprinkle sesame seeds and chopped scallions over the musubi before slicing into bite-sized pieces. Serve at room temperature or enjoy cold.
