Prepare the Vegetables
Dice the onion and bell pepper into small, uniform pieces to ensure even cooking.

Whisk the Eggs
In a medium bowl, crack the eggs and whisk them together until well combined. Add salt and black pepper to taste.

Sauté the Vegetables
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until they are tender and fragrant.

Add the Ham
Stir in the diced ham and cook for an additional 2 minutes, allowing the flavors to meld.

Cook the Eggs
Push the sautéed mixture to one side of the skillet. Add the remaining tablespoon of butter to the other side of the skillet and pour in the whisked eggs. Let them cook undisturbed for about 2 minutes until the edges begin to set.

Combine and Finish Cooking
Using a spatula, gently fold the sautéed ham and vegetables into the eggs. Cook for another 2-3 minutes until the eggs are fully cooked through. If using, sprinkle shredded cheese on top and cover the skillet for 1 minute to melt the cheese.

Plate the Omelet
Carefully slide the omelet onto a plate, folding it in half if desired. Garnish with chopped green onions if using, and serve hot.
