Method

Preparation of Ingredients

  1. 1

    Prepare the Steak

Season the flank steak with olive oil, salt, black pepper, and garlic powder. Let it marinate for at least 15 minutes.

  2. 2

    Make Pico de Gallo

Dice the tomatoes and red onion. Chop the cilantro and mix all the ingredients in a bowl. Squeeze the lime juice over the mixture and add salt to taste. Set aside.

  3. 3

    Prepare the Avocado

Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut into slices.

Cooking

  1. 4

    Cook the Steak

Heat a grill or skillet over medium-high heat. Cook the flank steak for 5-7 minutes on each side, or until it reaches your desired level of doneness. Let it rest for 5 minutes before slicing.

  2. 5

    Fry the Eggs

In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but yolks are still runny, about 3-4 minutes.

  3. 6

    Prepare the Tortillas

In a separate pan, lightly toast the corn tortillas until they are warm and slightly crispy. Cut them into quarters.

  4. 7

    Assemble the Chilaquiles

In a large plate or bowl, lay down the toasted tortilla quarters. Top with sliced steak, sunny-side up eggs, pico de gallo, avocado slices, and a generous pour of salsa.
