    Prepare the Ingredients

    Dice the golden potatoes, slice the cherry peppers and pepperoncini, mince the garlic, and dice the onion.

    Season the Chicken

    Season the chicken thighs with salt, black pepper, and Italian seasoning. Set aside.

Cooking

    Sauté the Sausage

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

    Cook the Chicken

    In the same pot, add 2 tablespoons of butter. Once melted, add the seasoned chicken thighs and sauté until browned on both sides, about 4-5 minutes per side. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the diced potatoes, cherry peppers, and pepperoncini. Cook for another 5 minutes, stirring occasionally.

    Deglaze and Simmer

    Pour in the white wine to deglaze the pot, scraping up any browned bits. Allow the wine to reduce for about 2 minutes. Then, add the chicken broth and return the browned chicken and sausage to the pot.

    Simmer the Stew

    Bring the stew to a simmer and cover the pot. Reduce the heat to low and let it cook for about 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.

    Finish the Dish

    Stir in the remaining 2 tablespoons of butter for added richness. Adjust seasoning with salt and pepper to taste before serving.
