Prepare the Pork
Season the pork shanks with salt and black pepper on all sides.

Sear the Pork
In a large Dutch oven, heat olive oil over medium-high heat. Add the pork shanks and sear until browned on all sides, about 10 minutes. Remove the shanks and set aside.

Add the Liquids
Stir in the canned diced tomatoes and white wine. Bring to a simmer and scrape up any browned bits from the bottom of the pot.

Combine and Braise
Return the pork shanks to the pot. Add the broth, thyme, and bay leaf. Bring to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the pork is tender and falling off the bone.

Finish and Garnish
Remove the bay leaf and stir in chopped parsley before serving.
For the Risotto

Prepare the Broth
In a saucepan, heat the chicken broth over low heat to keep it warm.

Toast the Rice
Add Arborio rice to the pot and stir for 2 minutes until the rice is lightly toasted.

Add Broth Gradually
Start adding warm chicken broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.

Finish the Risotto
Once cooked, stir in the grated Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.
