Prepare the Breakfast Potatoes
Peel and cube the breakfast potatoes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the potatoes, sprinkle with salt, black pepper, and garlic powder. Cook for about 10-15 minutes, stirring occasionally, until golden brown and cooked through.

Cook the Eggs
In a separate non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

Assemble the Huevos Rancheros
On each tortilla, layer a spoonful of refried beans, followed by the cooked eggs. Top with shredded cheddar cheese and a generous scoop of pico de gallo.

Toast the Rustic Bread
While assembling, toast the rustic bread slices until golden brown.
