    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a medium pot, cover the potatoes with water and add a pinch of salt. Bring to a boil and cook until tender, about 10-12 minutes. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper and sauté for about 3-4 minutes until softened. Add the cooked potatoes to the skillet, along with chili powder, salt, and black pepper. Stir well and cook for an additional 2-3 minutes.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them until well combined. Pour the eggs into the skillet with the potato and bell pepper mixture. Cook, stirring occasionally, until the eggs are fully set and cooked through, about 5-6 minutes.

    Add the Mozzarella

    Once the eggs are cooked, sprinkle the mozzarella cheese over the mixture in the skillet. Cover the skillet for a couple of minutes until the cheese is melted.

    Assemble the Burritos

    Warm the flour tortillas in a dry skillet for about 30 seconds on each side. Spoon a generous amount of the egg, potato, and cheese mixture onto the center of each tortilla. If desired, add chopped fresh cilantro on top.

    Roll the Burritos

    Fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling. Repeat with the remaining tortillas and filling.

    Serve the burritos warm with your favorite salsa or hot sauce on the side.
