For the Garlic Sauce

    Prepare the Garlic Sauce

    In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned. Stir in chopped parsley, lemon juice, salt, and black pepper. Remove from heat and set aside.

    Prepare the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with 1 tablespoon of olive oil, and season with salt and black pepper. Grill the salmon for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and keep warm.

For the Asparagus

    Sauté the Asparagus

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add trimmed asparagus, season with salt and black pepper, and sauté for 5-7 minutes, or until tender-crisp. Remove from heat and set aside.

For the Risotto

    Cook the Risotto

    In a large saucepan, heat 4 cups of broth and keep it warm on low heat. In another pan, melt 2 tablespoons of butter over medium heat, and add finely chopped onion. Sauté for 2-3 minutes until translucent. Add 2 minced garlic cloves and Arborio rice, stirring for 1-2 minutes until the rice is lightly toasted. Pour in 0.5 cup of white wine and cook until absorbed. Gradually add the warm broth, one ladle at a time, stirring frequently, until the rice is creamy and al dente, about 20 minutes. Stir in grated Parmesan cheese, salt, and black pepper.
