    Prepare the Ingredients

    Chop the red and green bell peppers, onion, and dice the tomatoes. Set aside.

    Beat the Eggs

    In a bowl, crack the eggs and whisk them together. Add salt and black pepper to taste.

    Cook the Filling

    In a non-stick skillet over medium heat, melt 1 tablespoon of butter. Add diced ham, bell peppers, onion, and cook until the vegetables are tender, about 5 minutes.

    Add the Eggs

    Pour the beaten eggs over the filling in the skillet. Allow the eggs to set around the edges.

    Finish the Omelet

    Using a spatula, gently lift the edges of the omelet, letting the uncooked eggs flow underneath. Once the top is slightly set, sprinkle diced tomatoes on one half and fold the other half over. Cook for another minute and slide onto a plate.

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes.

    Season the Potatoes

    In a bowl, toss the diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and black pepper.

    Cook the Potatoes

    Heat a skillet over medium-high heat and add the seasoned potatoes. Cook for about 15-20 minutes, stirring occasionally until golden brown and crispy.

Rustic Toast

    Toast the Bread

    While the potatoes are cooking, heat a separate skillet over medium heat. Spread butter on one side of each slice of sourdough bread.

    Finish the Toast

    Place the bread butter-side down in the skillet and cook until golden brown, about 3-4 minutes. Flip and cook for an additional 2-3 minutes until the other side is also golden.
