Prepare the Omelet

In a bowl, crack the 3 large eggs. Add 1 tsp of salt and 1 tsp of black pepper. Whisk until well combined and the mixture is slightly frothy.

In a non-stick skillet, melt 1 tbsp of butter over medium heat until it starts to bubble, ensuring the butter coats the bottom of the pan.

Fold and Finish Cooking
Using a spatula, gently fold the omelet in half over the toppings. Cook for an additional 1-2 minutes until the eggs are fully set and the cheese is melted.

Carefully slide the omelet onto a plate. Optionally, garnish with fresh herbs or additional cheese.

Sauté the Potatoes
Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and tender.

While the potatoes are cooking, toast 2 slices of rustic bread until golden brown.
