Preparation
Prepare the Cauliflower
Remove the leaves and stem from the cauliflower head and cut it into bite-sized florets.
Prepare the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well.
Add Water
Gradually add the water to the dry ingredients, whisking until you have a smooth batter. The consistency should be thick enough to coat the cauliflower.
Cooking
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Batter the Cauliflower
Dip each cauliflower floret into the batter, ensuring it is fully coated.
Fry the Cauliflower Bites
Carefully place the battered cauliflower florets in the hot oil, a few at a time. Fry until they are golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil.
Toss in Sauce
In a large bowl, toss the fried cauliflower bites with your choice of sweet chili sauce or buffalo sauce until evenly coated.
