Roast the Beets
Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil, drizzle with a little olive oil, and sprinkle with salt. Place them on a baking sheet and roast for about 45-60 minutes, or until tender when pierced with a fork. Once done, let them cool, then peel the skins off and cut into wedges.

Prepare the Salad Base
While the beets are roasting, wash and dry the arugula. Place it in a large salad bowl.

Make the Dressing
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Adjust the seasoning to taste.

Dress the Salad
Drizzle the dressing over the assembled salad just before serving. Toss gently to combine.
