    Wash and peel the Kennebec potatoes. Cut them into 1/4-inch thick fries, ensuring they are uniform for even cooking.

    Place the cut fries in a bowl of cold water for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature for frying.

    After soaking, drain the potatoes and pat them dry with paper towels. Remove as much moisture as possible to avoid oil splatter.
