Filet Mignon

Prepare the Filet Mignon

Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before grilling.

Season the Steak

Rub both sides of the filet mignon with olive oil, then season generously with salt, black pepper, and fresh rosemary.

Grill the Steak

Preheat the grill to high heat. Place the filet mignon on the grill and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired level of doneness.

Rest the Steak

Remove the filet mignon from the grill and let it rest for about 5 minutes before serving.

Cheddar Mashed Potatoes

Cook the Potatoes

Peel and chop the potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, cheddar cheese, milk, salt, and black pepper. Mash until smooth and creamy.

Adjust Seasoning

Taste the mashed potatoes and adjust seasoning with additional salt or pepper if needed.

Sautéed Baby Carrots

Sauté the Carrots

In a skillet over medium heat, melt butter. Add baby carrots and sauté for about 5-7 minutes until they are tender.

Add Honey and Seasoning

Stir in honey, and season with salt and black pepper. Cook for an additional 2 minutes, stirring to coat the carrots with honey.

Serve the Carrots

Remove from heat and set aside until ready to serve.
