    Prepare the Vegetables and Fruits

    Wash and peel the cucumber and mango. Cut the cucumber and mango into thin strips. Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon, then cut it into thin slices.

    Prepare the Sauce

    In a small bowl, combine the tamari and ponzu sauce. Mix well and set aside.

Assembling the Veggie Roll

    Soften the Rice Paper

    If using rice paper sheets, fill a shallow dish with warm water. Submerge one rice paper sheet in the water for about 10-15 seconds until it becomes soft and pliable. Remove it from the water and let excess water drip off.

    Layer the Fillings

    Place the softened rice paper sheet on a clean surface. In the center of the sheet, layer a few slices of cucumber, mango, avocado, and a handful of daikon sprouts.

    Roll the Wrap

    Fold the sides of the rice paper over the fillings, then roll the bottom edge over the fillings tightly, continuing to roll until the entire wrap is sealed. Repeat with remaining rice paper sheets and fillings.

Serving

    Serve the Rolls

    Cut each veggie roll in half and serve with the tamari-ponzu sauce for dipping.
