Prepare the Potatoes

Wash and peel the Kennebec potatoes. Cut them into thin strips, approximately 1/4 inch wide.

Soak the Potatoes

Soak the cut potato strips in cold water for at least 30 minutes to remove excess starch. This helps achieve crispy fries.

Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches for 5-7 minutes until golden brown. Remove and place on paper towels to drain excess oil.

Season the Fries

While the fries are still hot, sprinkle them with salt to taste.

Cook the Bacon

In a skillet over medium heat, cook the applewood bacon until crispy. Once cooked, remove and drain on paper towels.

Assemble the Sandwich

On two slices of bread, layer the jack cheese and cheddar cheese evenly. Add the cooked bacon on top, then place the remaining slices of bread on top to form sandwiches.

Grill the Sandwiches

In the same skillet used for the bacon, melt 1 tablespoon of butter over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Serve

Cut the grilled cheese sandwiches in half and serve hot alongside the crispy Kennebec fries.
