Prepare the Banana Filling

Stuff the Bananas
Peel the ripe bananas and slice them lengthwise without cutting all the way through. Spread 2 tablespoons of peanut butter inside each banana and sprinkle with chocolate chips. Close the banana halves and set aside.
Make the Tempura Batter

Mix the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and vanilla extract. Gradually add ice-cold water while whisking until the batter is smooth and slightly thick. Ensure there are no lumps.
Fry the Bananas

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a little batter into the oil; it should sizzle and rise to the surface.

Coat and Fry
Dip each stuffed banana in the tempura batter, ensuring it’s well-coated. Carefully place it into the hot oil and fry for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.
Assemble the Dessert

Plate the Tempura Banana Split
On a serving plate, place one tempura-fried banana. Add a scoop each of chocolate and vanilla gelato next to it. Drizzle caramel sauce generously over the dessert and sprinkle with chopped macadamia nuts.
