Adobo Shrimp

    Marinate the Shrimp

    In a bowl, combine the shrimp, adobo sauce, minced garlic, lime juice, olive oil, salt, and black pepper. Mix well and let it marinate for at least 15 minutes.

    Cook the Shrimp

    Heat a skillet over medium heat and add the marinated shrimp. Cook for 3-4 minutes on each side or until fully cooked. Remove from heat and set aside.

Skirt Steak

    Prepare the Steak

    Rub the skirt steak with olive oil, garlic powder, cumin, salt, and black pepper. Let it rest for 10 minutes.

    Cook the Steak

    Preheat a grill or skillet over high heat. Cook the skirt steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.

Guacamole

    Prepare the Guacamole

    In a bowl, mash the ripe avocados with lime juice. Stir in chopped cilantro, salt, red onion, and jalapeño until well combined.

Roasted Jalapeño Salsa

    Roast the Jalapeños

    Preheat the oven to 400°F (200°C). Place the jalapeños on a baking sheet and roast for about 15-20 minutes or until the skin is blistered and charred. Remove from the oven and let cool. Peel off the skin and chop.

    Make the Salsa

    In a bowl, combine the roasted jalapeños, chopped tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Burrito Assembly

    Assemble the Burritos

    Take a large flour tortilla and layer it with the cooked adobo shrimp, sliced skirt steak, guacamole, and cheese blend. Top with roasted jalapeño salsa. Roll the tortilla tightly to enclose the filling.

    Serve

    Cut the burrito in half and serve immediately with extra salsa on the side.
