Method
Prepare the Skirt Steak

Season the Skirt Steak
In a bowl, combine olive oil, salt, black pepper, ground cumin, and garlic powder. Rub this mixture onto the skirt steak evenly.

Prepare the Charred Corn Salsa

Prepare the Jalapeno Sauce

Blend the Sauce
In a blender, combine the roasted jalapeno peppers, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning if necessary.
Assemble the Quesadillas

Prepare the Tortillas
Heat olive oil in a large skillet over medium heat. Place a tortilla in the skillet.

Add Cheese and Steak
Sprinkle a layer of jack cheese, cheddar cheese, and cotija cheese on half of the tortilla. Add sliced skirt steak on top of the cheese.

Fold and Cook
Fold the tortilla over to cover the filling. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until the cheese is melted.

Repeat the process for the remaining tortillas and filling.
Serve

Slice and Serve
Cut the quesadillas into wedges and serve hot with charred corn salsa and jalapeno sauce on the side.
