Preparing the Patty Melt

Prepare the Ribeye Patty
Finely chop the ribeye steak and season it with salt and black pepper. Form the mixture into two equal-sized patties.

Melt the Cheese
Place a slice of smoked provolone on each patty during the last minute of cooking and cover the skillet to help the cheese melt.

Prepare the Bread
Spread mayonnaise on one side of each slice of sourdough bread. This will be the outside when grilling.

Assemble the Patty Melt
On the non-mayo side of two slices of sourdough, place a ribeye patty with melted provolone, a generous amount of caramelized Maui onions, and a handful of onion strings. Top with the other two slices of sourdough, mayo side up.

Serve
Once both sides are golden brown and the cheese is fully melted, remove the sandwich from the skillet, slice in half, and serve immediately.
