Preparing the Fish

    Make the Batter

    In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold beer, mixing until the batter is smooth and free of lumps.

    Heat the Oil

    In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dredge each mahi mahi fillet in the prepared batter, ensuring they are completely coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil. Fry in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Making the Fries

    Prepare the Potatoes

    Peel and cut the Kennebec potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a separate pot or fryer, heat the oil over medium-high heat to 350°F (175°C).

    Fry the Fries

    Drain the fries from the water and pat them dry. Fry the potatoes in batches for about 5-7 minutes until crispy and golden. Remove and drain on paper towels. Season with salt immediately.

Making the Sauces

    Prepare the Jalapeno Tartar Sauce

    In a small bowl, mix the mayonnaise, diced jalapenos, lemon juice, dill pickles, salt, and black pepper to taste. Stir until well combined.

    Prepare the Ponzu Sauce

    In another small bowl, combine the soy sauce, citrus juice, rice vinegar, and mirin. Mix well.

Serving

    Plate the Dish

    Serve the crispy battered fish alongside the hot fries. Provide the jalapeno tartar sauce and ponzu sauce in small bowls for dipping.
