Preparation

  1. 1

    Cook the Bacon

In a large pot over medium heat, cook the applewood smoked bacon until crispy. Remove the bacon, crumble it, and set aside, leaving the bacon drippings in the pot.

  2. 2

    Sauté the Vegetables

Add diced onion, chopped celery, and minced garlic to the pot. Sauté for about 5 minutes, or until the vegetables are soft and translucent.

  3. 3

    Add Potatoes and Broth

Dice the potatoes and add them to the pot along with the chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the potatoes are tender.

  4. 4

    Combine Remaining Ingredients

Stir in the heavy cream, salt, black pepper, cayenne pepper, fresh thyme, lobster meat, and shrimp. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Serving

  1. 5

    Garnish and Serve

Ladle the chowder into bowls and top with crumbled bacon, fresh parsley, and oyster crackers. Serve hot and enjoy!
