Preparation

    Prepare the Pineapple

    Cut the top and bottom off the pineapple. Stand it upright and slice off the skin, removing all the eyes. Cut the pineapple into thick rings, about 1 inch in thickness.

    Prepare the Serrano Peppers

    Slice the serrano peppers in half lengthwise and remove the seeds if you prefer less heat.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Pineapple

    Place the pineapple rings on the grill. Grill for about 3-4 minutes on each side or until grill marks form and the pineapple is caramelized.

    Grill the Serrano Peppers

    Add the serrano peppers to the grill. Grill them for about 2-3 minutes, turning occasionally, until they are slightly charred.

Serving

    Mix the Cocktail

    In a shaker, combine the Volcan Silver Tequila and Cointreau. Add ice and shake well. Strain into a glass.

    Plate the Dish

    Place the grilled pineapple rings on a serving plate. Top with the grilled serrano peppers and garnish with fresh cilantro and lime wedges.
