Rest the Meat
Remove the filet from the heat and let it rest for about 5 minutes before slicing it into 6 equal pieces for the sliders.

Melt the Cheese
During the last minute of cooking, place a slice of jack cheese on each piece of filet mignon, allowing it to melt slightly.

Assemble the Sliders
Place each piece of filet mignon with melted cheese onto a slider bun, top with onion strings, and drizzle with demi-glace before closing the bun.
Truffle Fries

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin strips to make fries.

Fry the Potatoes
Deep fry the potato strips in hot oil at 350°F (175°C) until golden brown and crispy, about 5-7 minutes. Alternatively, you can bake them in the oven.

Season with Truffle Oil
Once the fries are cooked, remove them from the oil or oven and place them in a bowl. Drizzle with truffle oil and sprinkle with sea salt to taste.
