Method

Preparation of Short Ribs

    Season the Ribs

    Pat the beef short ribs dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Ribs

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 4-5 minutes per side. Remove the ribs from the pot and set aside.

    Cook the Aromatics

    In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onions are translucent and fragrant.

    Braise the Ribs

    Return the short ribs to the pot. Add the beef broth, bay leaves, dried thyme, and cumin. Bring to a simmer, cover, and reduce heat to low. Let it braise for about 2.5 to 3 hours or until the meat is tender and falling off the bone.

    Warm the Tortillas

    While the short ribs are braising, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.

    Shred the Meat

    Once the short ribs are done braising, remove them from the pot and shred the meat using two forks, discarding any bones or excess fat.

    Assemble the Tacos

    Place a generous amount of shredded short rib on each tortilla. Top with chopped fresh cilantro, diced onions, a spoonful of guacamole, and jalapeño salsa. Serve with cooked pinto beans on the side.
