Ribs Preparation

Prepare the Ribs
Remove the silver skin from the back of the baby back ribs. This will help them become more tender and allow the seasoning to penetrate.

Season the Ribs
In a small bowl, mix together the brown sugar, garlic powder, onion powder, paprika, black pepper, and salt. Rub this mixture all over the ribs, making sure to cover both sides evenly. Let the ribs marinate for at least 1 hour, or overnight in the fridge for best results.

Prepare the Potatoes
Wash and peel the Kennebec potatoes. Cut them into uniform strips about 1/4 inch thick for even cooking.

Heat the Oil
In a large pot, heat the vegetable oil to 350°F (175°C) over medium-high heat.

Season the Fries
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle sea salt over the fries to taste.
