Wash and Prepare Greens
Thoroughly wash the arugula and spinach under cold running water. Shake off excess water and place them in a large salad bowl.

Prepare Baby Beets
If using fresh baby beets, boil them for about 15-20 minutes or until tender. Once cooled, peel and slice them into wedges. If using canned baby beets, simply drain them and cut into wedges.

Prepare Strawberries
Rinse the strawberries, remove the stems, and slice them into thin rounds.

Chop Walnuts
Roughly chop the walnuts into smaller pieces for easier eating.

Crumble Goat Cheese
Using your fingers or a fork, crumble the goat cheese into small pieces.
Assembling the Salad

Combine Ingredients
In the large salad bowl with the arugula and spinach, add the sliced baby beets, sliced strawberries, chopped walnuts, and crumbled goat cheese.

Dress the Salad
Drizzle the Bing cherry balsamic vinaigrette over the salad. Start with half a cup and add more to taste.

Gently toss the salad ingredients together until everything is well coated with the dressing.
