Preparation of Salad Base

Dry Greens
Pat the greens dry with a clean kitchen towel or use a salad spinner to remove excess water.

Combine Greens
In a large salad bowl, combine the arugula and spinach.
Preparation of Fruits and Nuts

Prepare Strawberries
Wash the strawberries and remove the stems. Slice them into thin pieces.

Prepare Baby Beets
If using fresh baby beets, wash them thoroughly, wrap in foil, and roast in the oven at 400°F (200°C) for about 30-40 minutes or until tender. Allow to cool, then peel and slice. If using pre-cooked beets, simply slice them.

Prepare Walnuts
Chop the walnuts into smaller pieces.
Assembly

Combine Salad Ingredients
Add the sliced strawberries, sliced baby beets, and chopped walnuts to the bowl with the greens.

Add Goat Cheese
Crumble the goat cheese over the top of the salad.

Dress the Salad
Drizzle the Bing cherry balsamic vinaigrette over the salad and toss gently to combine all ingredients.

Serve immediately on chilled plates or in salad bowls for a refreshing dish.
