Method

Garnish & Rim

1

Prepare half-salt rim

Pour the kosher or coarse sea salt onto a small plate. Rub the lime wedge around the outer half of the glass rim (for a half-salt rim, only wet half the rim). Dip the wet portion of the rim lightly into the salt, twisting to adhere. Set the glass aside.

Cocktail

2

Combine ingredients

Add Cazadores blanco tequila (2 oz), guava purée (1.5 oz), fresh lime juice (1 oz), and agave nectar (0.5 oz) into a cocktail shaker.

3

Add ice and shake

Add about 1 cup of ice to the shaker. Seal and shake vigorously for 12–15 seconds (until the outside of the shaker is very cold and you hear the ice slush).

4

Prepare serving glass

Fill the prepared glass with fresh ice (about 1 cup) to chill and provide dilution.

5

Strain and serve

Double-strain the shaken mixture into the prepared glass over fresh ice using a cocktail strainer and, if available, a fine mesh strainer to remove pulp and ice shards. This yields a smooth guava texture while keeping some body.

6

Garnish and finish

Garnish with a lime wheel on the rim or floated on top. Serve immediately. Taste and, if desired, add a 1/4 oz splash of agave nectar or a squeeze of lime to adjust sweetness/tartness.
