Herbs and Spices

Method

Preparation

  1. 1

    Prepare the Infusion

In a large glass jar, combine the dried wormwood, dried orange peel, dried juniper berries, dried mint, dried sage, dried chamomile flowers, dried rosemary, dried thyme, and the cinnamon stick.

  2. 2

    Add Alcohol

Pour in 750ml of high-proof alcohol (like grain alcohol or vodka) over the herbs and spices in the jar. Make sure the herbs are fully submerged.

  3. 3

    Seal and Steep

Seal the jar tightly and let the mixture steep in a cool, dark place for 2-4 weeks. Shake the jar gently every few days to help infuse the flavors.

  4. 4

    Strain the Mixture

After steeping, strain the mixture through a fine mesh sieve or cheesecloth into a clean bottle to remove the solids.

  5. 5

    Add Sweetener

If desired, add simple syrup to taste (about 1 cup of sugar dissolved in 1 cup of water), and mix well to combine.

  6. 6

    Bottle and Age

Transfer the strained amaro to a clean bottle, seal it, and let it age for an additional 1-2 weeks for the flavors to meld.
