Grilled Maitake Mushroom & Zucchini Squash

Prepare the Vegetables

Clean the maitake mushrooms gently with a damp cloth to remove any dirt. Cut the zucchini squash into 1/4-inch thick rounds.

Season the Vegetables

In a large mixing bowl, combine the maitake mushrooms and zucchini rounds. Drizzle with olive oil, and sprinkle with smoked sea salt and red chili flakes. Toss gently to coat the vegetables evenly.

Preheat the Grill

Preheat your grill to medium-high heat, ensuring it's hot enough for grilling vegetables.

Grill the Maitake Mushrooms

Place the maitake mushrooms on the grill and cook for about 4-5 minutes per side, or until they are tender and have nice grill marks.

Grill the Zucchini Squash

Add the zucchini squash rounds to the grill. Grill for about 3-4 minutes per side, or until they are tender and have grill marks.

Prepare the Scallion Garnish

While the vegetables are grilling, chop the scallions into thin slices.

Serve

Once the vegetables are grilled, remove them from the grill and place them on a serving platter. Drizzle with lemon juice and garnish with chopped scallions before serving.
