Method
Pineapple Sorbet

Prepare the Ingredients
Chop the fresh pineapple into small chunks.

Blend the Sorbet Mixture
In a blender, combine the chopped pineapple, sugar, lime juice, and water. Blend until smooth.

Chill and Freeze
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches a sorbet consistency.
Mango-Coconut Sorbet

Prepare the Ingredients
Chop the fresh mango into small chunks.

In a blender, combine the chopped mango, coconut milk, sugar, and lime juice. Blend until smooth.

Coconut Tapioca

Cook the Tapioca Pearls
In a saucepan, bring 4 cups of water to a boil. Add the tapioca pearls and cook for about 15 minutes, or until they are translucent. Drain and rinse under cold water.

Make the Coconut Mixture
In the same saucepan, combine the cooked tapioca, coconut milk, sugar, and a pinch of salt. Stir and cook over low heat for 5 minutes, ensuring it doesn’t boil.

Cool the Tapioca
Remove from heat and let it cool before serving.
Dulce de Leche Alfajor Cookies

Prepare the Dough
In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well.

Add Dry Ingredients
Gradually add the flour and cocoa powder to the mixture, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 1 hour.

Bake the Cookies
Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to about ¼ inch thick. Cut into rounds and place on a baking sheet. Bake for 10-12 minutes until slightly golden. Let cool.

Spread a tablespoon of dulce de leche between two cookies to form a sandwich. Repeat with remaining cookies.
