Pizzetta Dough

Prepare the Dough
In a mixing bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until it becomes frothy.

Mix Ingredients
Add flour, olive oil, and salt to the yeast mixture. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let rise for 1 hour.

Roll Out the Dough
After the dough has risen, preheat your grill or oven to medium-high heat. Roll the dough out to your desired thickness.

Prepare Scallions
Trim the roots from the scallions and slice them in half lengthwise.

Fry Scallions
In a skillet, heat vegetable oil over medium heat. Fry the scallions until they are crispy and golden, about 3-5 minutes. Remove and drain on paper towels.
Truffle & Pistachio Relish

Prepare the Relish
In a small bowl, combine chopped pistachios, truffle oil, honey, and salt. Mix well until combined.
Assembling the Dish

Grill the Pizzetta
Place the rolled-out pizzetta dough onto the grill. Cook for 3-4 minutes on each side until golden and slightly charred.

Assemble Toppings
Once the pizzetta is grilled, layer the mortadella slices evenly over the top, followed by the burrata cheese. Drizzle with the truffle & pistachio relish.

Serve with Charred Scallions
Top with the fried scallions and serve immediately while warm.
